Specialty oils are highly unsaturated and react quickly with light and oxygen to deteriorate and spoil if not protected. Sanmark diligently protects the quality and integrity of all products during manufacture and storage by sealing them with nitrogen in containers that form an effective oxygen barrier. Our care and attention to detail enable us to guarantee a two-year shelf life for our products in the original packaging. A customer can add additional protection by requesting antioxidant compounds to further inhibit oxidation and to increase shelf life.

Oxidation or damage in oil can be measured by a peroxide test and anisidine test. The peroxide test measures the most immediate products of oxidation (peroxides) and the anisidine test measures the long-term products (aldehydes) of oxidation. Both together give a complete picture of the state of the oil. These two combined measures are referred to as the TOTOX value, which is calculated as:
TOTOX = Anisidine Value + (2 x Peroxide Value)
